Typical Ethernet is 8 pins (4 pair) -- only 2 pair of which are used for data and PoE usually sits on a remaining pair. Devices like these probably have no use for 4 pair running up to the camera which may account for the gaps.

Figured it out:
Yellow = brown and brown/white
Green= Green and blue/white
Blue= blue
White =green/white
Gray= Orange
purple = Orange / white

It depends on the brand of the camera and some resources online (depending on how popular the cam is) may have a pin-out from someone having done something similar. Any way to splice open the plastic or chip away at it enough to see the pin-out on the damaged jack?
